Yeow, that looks good. Joe is so down to earth... you can tell he is cooking for and teaching with real people in mind. What a great show. I'm looking forward to trying the omlete with the Spinach, and I think the whole butterflying of the chicken opens up worlds of endless possibilities.
One thing I like to do with a chicken breast is to bake it with a little bit of Sesame oil on it.
It is way smart that you look at the meal from the flavor, cost, nutrition, ease and attractiveness angles together in a balanced, natural approach.

I am going to try this recipe this week.
Now that my little girl is starting 2nd grade, and both her mother and I work full-time, this is an excellent, quick, and simple meal. I like Dr. Andra's suggestion regarding the spinach and mozzarella. I will try that on a night after I have had a greasy hamburger or equivalant decadent meal.
Even though I am a happily-married, upper middle-aged father of both a 24 year-old, and 7 year-old, I still like all of the ladies to whistle when I walk by, which last happened when Carter was presidnet.

A very informative video. I plan to replicate this recipe over the weekend. I must say, that Dr. Andra seems to be very sharp on the nutrition side. She's also REAL beautiful and that only makes me want to wait for the next bit.

This dish is a great meal and fairly simple (btw, for an extra "zing", add some fresh lemon and white wine to the saute phase)...I too really liked the ideas Andra had about stuffing it with spinach and a "lighter" cheese...so, I did it! what a friendly chef! I believe he does know what he is doing and loves every minute of it. Andra did a great job in explaining what each part of the meals really means, in terms of nutrition to the consumer. I loved it!! great work!

Looks dee-lish, and Joe's instructions make it sound so easy to do. I'm watching the LBs, so Andrea's suggestion of using a lower-fat cheese and spinach as a stuffing was really helpful. And cool to hear about the nutrition side of the meal from her. Great stuff!

Hey Camera Guy-would have been great if you came in for a close up while the chef and dietician were discussing each dish. The last 3 minutes of the show, I was hoping to get a close up of the finished courses. Instead, it was set on the same angles. Lost the effect of what could have been an appealing meal. What do you think, Director?
